Power breakfast!

SATURDAY AGAIN!!!


We had a big day today. Went to a friends house to take Joey swimming. This will be the first time Joey has really gotten to go in a nice big swimming pool. He  had such a blast. Before we got to go swimming today, Joey started the day off nice and early (5am) and decided he wanted to come to bed with mom and dad so they could get a couple more hours of sleep. We did get to sleep in which was really nice. By the time we got up, it was a little too late to just have some cereal and yogurt for breakfast. We wanted to eat something that would fill us up, seeing that we were gonna be in the sun most the day. I looked in the fridge and saw we had some leftover salmon from the sushi last night. What is more filling than Lox and Bagels. We absolutely love this dish and it would definitely hold us off until dinner. It is pretty simple to put together. Bagels (whichever kind you like an we like ours toasted), salmon, red onion, capers, boiled eggs, and cream cheese. Throw it all on one plate and you have a delicious brunch that can fill you up. Always a nice touch for those lazy Saturday mornings.

Tonight's Menu! Sushi!!!

 There is nothing better than heading up to the local sushi joint and ordering up a couple of your favorite sushi rolls. There is always so many options to pick from. I love the soft shell crab! The Mrs. will order california rolls all day long. That was the good old days though. The chances of finding us at the sushi restaurant now are slim to none. Now  the little guy just wants to be on the ground crawling wherever we are, so its harder to go out to grab a bite to eat anywhere. We were really in the mood for some sushi, so what do you do if you can't get it? You bring it to you. No no no, not order it. You roll it yourself.


Not gonna lie, there is a finesse to rolling sushi but we had a blast either way. Jill prepped most the fix-ins. We used cucumbers, avocados, and carrots, and cream cheese. I prepared all the meats, rice (we used sticky sweet rice), and put the rolls together. For meats we had imitation crab, smoked salmon, and pinko fried shrimp. We picked up all the ingredients at Publix.


So above is the basic layout of making your rolls. The rice was steamed and then layer on the seaweed wrap. The rice can get sticky, so make an equal amount of water and vinegar mixture and dip your fingers in that to avoid the stickiness. Add your fix-ins on top of the rice ( be careful not to add to much because it will be hard to roll -- you will get the hang of it as you go). The seaweed is lain out flat on top of a sushi rolling mat (the bamboo looking mat in the picture above), it is important to have one of these because it makes the rolling process much easier. You can usually find these at a local asian market. I like to lift the mat from both sides to compress the fix-ins and rice. Once the fix-ins and rice look nice and firm, fold the mat over so that the seaweed reaches the end of the fix-ins (in the picture , I mean lift from the bottom end of the mat and roll up to the top part of the rice). Squeeze the roll to compress the rice and tuck the seaweed with the top end of the rice. This makes the rest of the rolling process easier. Once the seaweed is nice and tucked continue rolling. Once you reach the far end of the seaweed (in the picture, the top), moisten the seaweed with the water-vinegar mixture, then finish rolling. Roll the mat all the way through to complete the sushi roll. That's it to the rolling.

Then you have to slice the little rolls of asian cuisine. Just remember to dampen your very sharp knife with the water-vinegar mixture after each slice. The cream cheese will stick to the knife with each slice, but you need a clean knife to make clean slices. As well, remember you are not the Kung Fu of rolling sushi yet, so if they fall apart, just moisten the seaweed ends and stick back together...


One of my wife's favorite appetizers to order whenever we go to a Chinese, Thai, Japanese, or any asian restaurant is crab rangoon. So I decided to surprise her with some of these too. For these you need: wonton squares, cream cheese, finely diced carrots, dried minced onion, lime juice, worcestershire sauce, and asian hot chili sauce, and egg whites.

Soften the cream cheese in the micro for 20-30 seconds. The in a bowl mix the cream cheese, little bit of diced carrots, tablespoon of dried onion, splash of lime juice, splash of chili sauce, dash of worcestershire sauce. Take a single piece of wonton and scoop some of the cream cheese mixture in the center. moisten the edges of the square with the egg whites, then fold from corner to corner. Press the edges together firmly to seal. Heat up some oil in a wok on med-low to med. Carefully place the wontons in the fryer and fry until golden brown then flip and brown on the other side. Once finished place over some paper towels and let cool. Ready to serve, We like them with sweet chili sauce.



So there is sushi night at home, We plated everything together and it ended up delicious. We made three rolls and was way to much for the two of us. Two would have been fine. The best part is there is so many ways to prepare your own. Add whatever you like to your rolls, If you have a family, then each can have them their own way. Joey was ready to dig in, but he isn't quite old enough yet. Enjoy!

Being A Father



Our baby Joseph is turning one in a few weeks. I am excited and can't explain how great it is to have him in our lives. Everyone must experience how awesome it is to have a child of their own. Words can't describe the feeling. I love opening the door after being in school all day long and seeing his huge smile. We all have difficult days at work or school, but children can just fill a room full of sunshine, no matter the circumstance. We should try our best to remember not to bring home our stresses from school or work. Our children look up to us and I keep getting told that they are only young for so long. Well, I am determined to stay focused on my family. Life can get very busy when trying to pursue a medical career, but I never forget that my family is on this long haul with me. We need to take time with our kids, their future depends on us. As parents we teach our children to survive in this crazy world.  There are much more obstacles in life today that could hinder our children to succeed. I want to be a mentor for my son, have him look up to me and tell his friends how much he enjoys spending time with his dad. When I look at this picture of Joey and I, all I could think is that right now, I am more than just his dad, I am his mentor, just like a superhero. He looks up to me and I need to show him how to live, learn, and play. I promise that I will be a mentor for my son. I want him to live a full happy life. I don't want him to look back one day and say, "my dad never did this or that with me". And I'll never expect him to become some CEO and wear expensive suits. I just wish for him to be free spirited and let his mind explore the many talents he may have. So remember dads, be a superhero to your kids, they depend on your guidance!

Orange Basil Grilled Chicken


Hey Folks! If you know me very well, then you know I am the master of throwing together a dish. Well Sunday after our family fun at the park, Joey was getting ready for bed and I was going to prepare dinner. Lets get real though. Who ever has every single meal planned out! Not in this household. We do try to keep a schedule for our meals, but most of the time with the hectic schedules for mom and dad, I have to go into fridge and pantry search mode. So basically here is how Sunday's dinner went.

Orange Basil Grilled Chicken

                                               
I had some frozen chicken quarters that I had thawed throughout the day. You can get great deals on chicken quarters at Walmart. Huge bags for cheap. They can go a long way. I saw some Orange marmalade (sugar free for you belt watchers) in the fridge. I like the taste of citrus flavors on the grill too. It fits well during the hot summers. I heated the jar right in the micro and added some olive oil to make the consistency good for basting on the grill. I then took some crushed dried basil leaves (I use dried often, because my herb garden does't exist yet, but hope to have one soon) and added them to the mixture. I like to crush the dried herbs to bring out lots of flavor. And thats it. You have yourself a great marinate to use on the grill for basting. Now grilling chicken isn't just for the pro's. Anybody can create a great piece of meat on the grill, remember to have patience. I grill my chicken on low and keep basting, basting, basting. Basting is what puts that nice crisp grill mark on the skin and provides lip smacking good flavor. Also, remember that the internal temp of chicken varies between books and websites. I keep my temp above 165 F (74 C) to make sure its cooked all the way through.

I plated this chicken with a sweet potato and some broccoli( Again my garden was all out > frozen ). Throw some parsley on to kick up the appearance a bit. Turned out great and I hope you enjoy too. Below is a preview of ingredients for sauce.


Sugar Free Orange Marmalade -
 <There are tons of marmalades out there, so whatever you have I am sure will work fine>

Olive oil -
<Just add enough so it will baste good on grill>

Crushed dried basil -
<Fresh will work also, just dice finely>




Good Weekend...



Our boy sure did enjoy his watermelon this past weekend!  We enjoyed our quiet Sunday, so to take a break from studying yesterday I decided to take my family on a drive. Since we are a family on a budget we love to just do the simple things. We shared a snack at a park near the Halifax River. Afterwards, we shared an ice cream and found another quiet park outside of town called the James Ormond Park. This park has a tomb of James Ormond who the city was named after. It was pretty cool. Then we drove around for a bit looking at houses that we wish we could live in some day. Not now, but soon (have to keep telling ourselves that). People sure live in some nice places though. It is completely different here in the states than Iraq. Makes you really appreciate the things you get here. Unfortunately most don't realize how nice we have it. We ended the day back home with some grilled orange marmalade chicken. Turned out delicious. Later I will post a photo of the chicken with a recipe and how I prepped it. The Cossu's Spaghetti Sauce



We always look forward to Saturday nights. Since my wife has to work most Saturday's, this is our official night together when Joey gets to bed. So last night we made my famous spaghetti! I'm Italian, Sardinian to be exact. Making spaghetti is like second nature to me. It's in my blood. Therefore, I never use store bought pasta sauce. I make my own. Here I will share my recipe, so that others can also enjoy. Remember, we are a hard working family with limited time, so some day I will use ALL natural ingredients. At this point, some ingredients are still from the can or frozen, but contain far less sodium than the pasta sauces at the store. I also like to make my sauce in bulk so when our schedules get hectic I have reserves in jars in the freezer. Here goes:

Olive Oil

1 1/2 lbs. of lean ground meat (we have used both turkey or beef, it's what you prefer)

4 cans of low sodium diced tomato's

1 can of low sodium tomato paste

1/2 a bag of bird's eye pepper stir fry (you can find this in your frozen section of your grocery store. I like to keep the frozen stir fry so we don't risk our food going bad in the refrigerator all the time)

2 - 3 Tablespoons of pre minced garlic

1 Tablespoon of sugar (this adds a sweet flavor, if you don't prefer then eliminate this)

1/2 Tablespoon of chili powder

1/2 Tablespoon of garlic powder

1 - 2 Tablespoons of low sodium soy sauce

Italian Seasoning to your liking

Preparation:

In a large pot heat some olive oil. Add the minced garlic to the oil and heat for thirty to forty five seconds. Be careful not to over cook the garlic because it will burn easily. Next, add the pepper stir fry mixture and sauté until the mixture softens. (Careful when adding the frozen stir fry which contain water that will react with the oil, making a sizzle and may splatter).  Once those have softened add your ground meat. Cook the meat until it has completely browned. Now add your diced tomato's to the pot and stir. While stirring add the sugar, chili powder, garlic powder, the italian seasoning and your soy sauce. Continue to stir. Let this mixture simmer for about ten minutes so the flavors cook together. Take 3/4 of the sauce and add to your blender and blend thoroughly. While that's blending add the the tomato paste to the left over sauce in your pot. Stir the paste in with your sauce. (It's easier to see that your paste is completely mixed with your sauce rather than trying to mix it into a full pot of sauce). Now take your sauce from the blender and pour it back into your pot with the remaining sauce. Add some more Italian Seasoning and stir again. It's recommended to let simmer for about thirty minutes. This will allow all the flavors to blend well. Now serve over your preferred pasta noodles. What is left remaining you can store in some old pasta jars and place in freezer. Later I will write another blog on the proper way to can your left over pasta sauce.

BLT's - Quick and easy lunch


Sometimes on the weekends we like to let loose and enjoy a nice lunch with the family. These days, it cost around $30.00 just to go out and get something at a good cafe'. So we decided to just take it easy and throw together the classic BLT. We always use a thick maple bacon and it always turns out so delicious. Joey was even drooling over the sandwich, but he had to stick with the mixed veggie's. Yum

Sunny Florida!


We love Saturday's, but its blistering outside. It's time like this when we really wish we had a pool to jump into in the backyard. Someday we will !! We did want to go purchase one of those nice sized portable pools that you can fill with water, but the HOA says that we cannot. Liabilities. It seems like to do anything these days you need a permit or license. We improvised though. Went and got Joey and Noah (our dog), a couple of kiddy pools. They are a good size though. Enough for all of us to fit in tight. Jill and I usually take turns with Joey. There can't be very much water in the pool anyways since Little Joey can't swim yet. Well after some fun in the water, we are going to go to Dunlawton Sugar Mill Gardens. They have nice shaded paths to walk on and look at the flowers and trees. Gonna be a nice Saturday and to all of you out there, enjoy your saturdays. Try to forget about all the stresses from last week and enjoy life!
